Farming in the WIESERGUT
In time with the seasons, in harmony with nature. Farming has been part of the Kröll family for centuries. The land has always been tilled, sown, harvested, fed and milked. And until today, hotelier and farmer Sepp Kröll keeps 40 prized Pinzgau cattle – his “girls”, which he feeds daily himself and finds a healthy balance to his work in the hotel in this.

There are many facets to Sepp Kröll. One of them: Cowboy. In the morning when guests are still dreaming in their suites, he goes to his beloved cows in the stable to milk them. In summer high up at the WIESERALM, in winter right next to the hotel. Thanks to his loving care and affection the animals live like in paradise. They hardly ever fall ill, veterinarians are seldom called for, antibiotics and soy are done completely without. The aspirations are high and so is the quality of the milk and meat, that is processed both in the hotel kitchen as well as in the Wieseralm mountain restaurant.

Trend or not. When growing up on a farm you automatically grow up with a seasonal menu. At the end of the day, you harvest what has just ripened in the field or in the garden and then process it right away. Everything is used, as little as possible thrown away – for nature’s sake. We have always stayed true to this principle. We still bake our own bread, harvest herbs, vegetables and berries. Produce jams, spreads, butter and fresh cheese. Serve breakfast eggs from our hens and venison we hunt ourselves. Even our drinking water comes from our own well. For us, quality comes before quantity – be it for our blissful breakfast, the 7-course slowfood-menu in the evening or in our WIESERALM gourmet mountain restaurant. You won’t find any buffets here. We believe in conscious enjoyment without haste.
